How to use baking soda
Baking soda is used not only for raising dough but also for removing harsh flavor in food (e.g., wild-grown vegetables) and for softening beans and meat.
    
In order to remove the harsh flavor, add around 1 teaspoon of baking soda per 1 liter of water when you boil vegetables. The colour of the vegetables also becomes brighter.
    
If you would like to soften beans by using baking soda, soak beans overnight in water which contains around 2% baking soda (water just covers the beans). The reasons why beans become soft are: (1) protein in the bean is dissolved so that water can easily go inside the bean, (2) alkaline softens the fiber in the bean (baking soda solution is alkaline).  If you would like to soften meat, rub the meat with a moderate amount of baking soda, then wash it away with water.
